摘要
目前天然的抗氧化剂成为人们研究的热点,研究发现水解蛋白质得到的肽具有良好的抗氧化活性。构树叶中含有丰富的蛋白质,对构树叶中蛋白质水解产物的抗氧化活性进行研究。结果表明,构树叶提取物具有一定的抗氧化性,其中用真菌α-淀粉酶、纤维素酶、胃蛋白酶和木瓜蛋白酶4种酶组合水解后的溶液的DPPH自由基清除活性、羟自由基清除活性和还原力最高,由真菌α-淀粉酶和木瓜蛋白酶组合水解后的构树叶提取物的金属离子螯合力最大。
At present,the natural antioxidants become the hot spot,and it found that,hydrolyzed protein giving good peptides which have good antioxidant activity.Papermulberry leaves contains rich protein,the experiments research the antioxidant activity of proteolysis product from Papermulberry leaves.The results show that leaves extract has certain oxidation resistance which use the fungi alpha amylase,cellulose enzyme,pepsin and papain four enzyme hydrolysis of the combination solution DPPH radical scavenging activities,hydroxyl radical scavenging activities and reduction highest force,the extracts from the leaves that hydrolyzed by the fungus alpha amylase and papain metal ions chela force is the largest.
