葡萄酒质量评分的统计分析方法研究 被引量:4

摘要 葡萄酒种类繁多,成分复杂,气味和口感变化很大。虽然人们在如何利用现代仪器分析以确定葡萄酒的质量方面做了极大的努力,也取得了突破性的进展,但是目前感官评价还仍然是评价葡萄酒质量最有效的方法。在评价葡萄酒质量时,通常通过聘请品酒员对葡萄酒进行品尝后打分来确定。由于品酒员间存在评价尺度、评价位置和评价方向等方面的差异,导致不同品酒员对同一酒样的评价差异很大,从而不能真实地反映不同酒样间的差异。采用对专家进行随机分组的方法,将专家评分分成多个组,通过多种统计分析方法对多组专家评分的可靠性进行了比较和分析,选取可信性最高的小组评分作为有效评分。对怎样建立更合理的专家评分体系做出了有益的探讨。 Due to a large variety of grape wines,complex composition,odor and taste change a lot.Although people use the modern instrument to determine the quality of wine for a great effort,also obtain a breakthrough,but the sensory evaluation is still the most effective method for evaluation of wine quality.In the evaluation,the values given by different tasters for the same sample are variable,because the tasters have different scales,positions and directions of evaluation.Therefore the difference existing among samples of wine are often concealed.In this paper the expert score is randomly divided into a plurality of groups,through a variety of methods of statistical analysis to multiple groups of experts,score reliability is compared and analyzed,the credibility of the highest team score is to select credibility efficient score,to establish a more reasonable expert evaluation system to make the beneficial discussion.
