摘要
对我国209份芝麻种质资源的芝麻素、脂肪和蛋白质含量进行了分析,结果表明:芝麻素含量变异幅度为1.32~5.00 mg/g,平均为3.59 mg/g,变异系数和多样性指数最大,分别为16.75%和2.11;脂肪含量变异幅度为42.02%~55.47%,平均为51.68%,变异系数为3.85%,多样性指数为2.01;蛋白质含量变异幅度为17.83%~25.76%,平均为21.27%,变异系数为4.89%,多样性指数为1.91。芝麻素与脂肪含量呈显著正相关,脂肪与蛋白质含量呈极显著负相关,但芝麻素与蛋白质含量相关不显著。脂肪含量随芝麻籽粒颜色的加深呈下降趋势,白色、黄色和褐色芝麻的脂肪含量极显著高于黑色芝麻(P<0.01),而且白色芝麻极显著高于褐色芝麻(P<0.01);蛋白质含量则随芝麻籽粒颜色的加深呈上升趋势,白色、黄色和褐色芝麻的蛋白质含量极显著低于黑色芝麻;但不同粒色芝麻间芝麻素含量差异不显著。
The contents of sesamin, oil and protein in sesame from 209 sesame germplasm resources China were analyzed. The results showed that the variation of sesamin content ranged from 1.32 mg/g to 5.00 mg/g, with an average content of 3.59 mg/g, and the coefficient of variation and diversity index were 16.75% and 2.11 respectively, which were the highest; the variation of oil content ranged from 42.02% to 55.47% , with an average content of 51.68%, and the coefficient of variation and diversity index were 3.85% and 2.01 respectively; the variation of protein content was in the range of 17.83% - 25.76% , with an average content of 21.27%, and the coefficient of variation and diversity index were 4.89% and 1.91 respectively. Furthermore, a significantly positive correlation was found between oil and sesamin contents and negative correlation was an extremely significantly found between oil and protein contents in sesame. However, no significant correlation was found between sesamin and protein contents. The oil content decreased and protein con- tent increased with the darkening of sesame seed coat color, oil contents of white, yellow and brown sesame seeds were significantly higher than that of black sesame seed (P 〈 0.01 ), and oil content of white sesame seed was significantly higher than that of brown sesame seed (P 〈 0. 01 ). Protein content of black sesame seed was significantly higher than that of brown, yellow and white sesame seeds, while no significant difference was found in sesamin content among different seeds coat colors.
