摘要 综述了低熔点植物油耐寒性评价的研究发展现状,分析了影响植物油耐寒性的因素,总结了不同分析方法,包含冷冻试验法、低温储藏试验法、物性测定法、浊度测量法及核磁共振法对植物油耐寒性评价的研究进展,对比了不同评价方法的适用范围及优缺点,讨论了改善植物油耐寒性评价方法的途径,并对植物油耐寒性评价方法的发展前景进行了展望。 Progress in evaluation methods for The factors affecting cold tolerance of vegetab cold tolerance of low melting vegetable oils was reviewed. le oils were analyzed. The progress, scope, advantages and disadvantages of the analytical techniques, such as cold test, low temperature storage test, physical properties determination, nuclear magnetic resonance method and turbidity measurement, were discussed, compared and summarized. And the way to improve the evaluation methods was discussed. The development trend of evaluation method for cold tolerance was prospected.
