摘要
ε-聚赖氨酸是一种微生物源的、可食用、无毒害、可生物降解的天然氨基酸聚合物,其在食品、医药、环保和化工等许多工业领域具有广泛的应用价值。本文就国内外关于ε-PL发酵菌种改造、发酵生产及聚合度控制三个方面对ε-PL最新工业化研究现状作了综述性介绍。
ε-Poly-L-lysine is a natural amino acid polymer with microbial source, edible, non-toxic and biodegradable, which used widely in many industrial fields such as food, medicine, environmental protection, and chemical. This paper mainly reviews the latest industrialized Research and applications of ε-PL on the aspects of ε--PL fermentation strain improvement, fermentation process and the degree of polymerization of ε--PL control.
