摘要
对还原性醛糖(D-葡萄糖)和酮糖(D-果糖)的美拉德反应机理,中间产物进行了详细的讨论,得出了还原性糖发生美拉德反应的一般规律.还原性醛糖经5种途径,生成HMF,异麦芽酚和2-羟基乙酰呋喃.酮糖经两种途径,生成HMF.
The Maillard reaction mechanism of the reducting aldose (D-glucose) and ketose (D-fructose), intermediate products were discussed in detail,for getting the general rule of reducing sugar Maillard reaction. Reducing aldose was reacted by 5 ways, generating HMF, isomaltol and 2-hydroxyl acetyl furans, while sugar by 2 ways, generating HMF.
