摘要
目的:了解遵义师范学院大学生早餐就餐情况、营养摄入及其影响因素,为丰富大学生的健康知识和改善大学生早餐现状提供参考依据。方法:从各年级不同专业分层随机抽取学生866名,用回顾性问卷调查法了解其通常一周食用早餐情况。结果:一周内每天都吃早餐的大学生人数仅占被调查总人数的57.7%,不吃早餐的主要原因是起得太晚没时间,大部分学生早餐食物单调,营养状况较差,只有6.2%的大学生食物包含肉类、面食类、谷物类、奶制品类和蛋类中的三到四类,大学生每次早餐消费水平有显著的性别和年级差异(χ2=59.622,p<0.01;χ2=29.116,p<0.01)。结论:大学生早餐就餐情况不容乐观,就餐率低,早餐摄入营养价值不高,开展早餐营养健康知识教育,制定合理的作息时间,养成良好的生活习惯能有效提高大学生早餐就餐率。
Objective: to learn about the breakfasting behavior, mainly about nutrition intake, of undergraduates in Zunyi Normal College and certain attributing factors for the sake of enriching undergraduates with health information and providing some reference for improving undergraduates' breakfasting behavior. Method: 866 students with different majors from different grades were selected and tested about their weakly breakfasting behavior by means of questionnaire. Results: about 57.7~,/0 of the students had breakfast everyday, and the main reason of not having breakfast is due to their getting up too late; what's worse, the majority had monotonous food for breakfast with poor nutrition, and only 6.2% of the students took three to four kinds of the whole nutriments like frumentum, pasta, meat, milk or soybeans and eggs. There exist certain differences in each breakfasting assumption in terms of sex and grade: Conclusion: the situation of breakfasting in college students is still far from satisfaction, viz., breaking rate is low and nutrition is poor. Therefore, only when undergraduates have a good understanding of health knowledge, make a reasonable schedule and form a good habit, can breakfasting rate be improved well.
