摘要
目的为规范我市餐饮服务行业餐饮具卫生管理,进一步提升餐饮服务食品安全监管水平,保障人民群众身体健康。方法实施《餐饮服务食品安全监督管理办法》、《消毒管理办法》等法律法规和规章及《南通市"放心餐具"工程实施方案》。结果使全市餐饮行业食品安全主体责任意识进一步强化,食品卫生安全管理制度进一步健全,餐饮具洗消场所和设施进一步完善,餐饮具清洗、消毒、保洁措施得到有效落实。结论解决了我市大部分餐饮和集中消毒单位餐具消毒管理和餐具消毒工作存在的问题,餐饮具消毒达到规模化、规范化、标准化的目标。
Objective : To standardize the health management of tableware for the food service industry in our city, to further en- hance the supervision of food service and safety, so as to protect the health of the people. Methods : Laws, regulations and rules such as "Food Service and Safety Supervision and Management Measures"," Disinfection Management Approach" and"Assured Tableware Project Implementation Plan in Nantong City" are enforced. Result : The main responsibilities for food safety aware- ness of the city's food and beverage industry have been further strengthened, and the management system for food hygiene and safety greatly improved, tableware decontamination sites and facilities established and further improved, and the tableware cleaning, disinfection and clean - keeping measures effectively implemented. Conclusion: The problems of centralized disinfec- tion units, the tableware disinfection management and tableware disinfection work existed in the city most food and beverage industry have been solved, and the goal of large scale tableware disinfection and standardization achieved.
