钝顶螺旋藻藻蓝蛋白稳定性研究 被引量:7

摘要 从钝顶螺旋藻藻粉中分离纯化藻蓝蛋白,对其稳定性进行全面考察。实验结果表明,钝顶螺旋藻藻蓝蛋白溶液在低于40℃,pH4~8范围内能保持较高的活性,光照、反复冻融使藻蓝蛋白溶液的稳定性明显下降,0.5 mol/L^2 mol/L的NaCl起到稳定藻蓝蛋白的作用。藻蓝蛋白干粉在60℃、湿度为(75±5)%的条件下,活性不变,且10 d后增重不超过5%;4 500 lx光强使藻蓝蛋白干粉活性显著降低。因此,长期保存藻蓝蛋白以干粉为宜,在低于60℃的弱光低湿环境中保存。 Phycocyanin was separated and purified from Spirulina platensis powder and its stability was investigated all around. The results showed that phycocyanin solution was stable when the temperature was under 40 ℃ and pH value was 4-8, but unstable to light and freezing and melting repeatly. Phycocyanin is also stable when dissolved in 0.5 mol/L-2 mol/L NaC1. The activity of phycocyanin dry powder could be maintained and its weight gain was no more than 5 % ten days later when the temperature was 60℃ and humidity was (75±5) %. 4 500 lx light intensity could make the activity of phycocyanin dry powder lower. Long-term preservation phycocyanin to dry powder, under 60℃, weak light and lower humidity was advisable.
