摘要 以木瓜蛋白酶和纤维素酶对壳聚糖进行降解研究,分别考察温度、pH值、底物浓度、酶底比以及复合酶配比对降解过程的影响,然后通过红外光谱分析降解产物的结构。结果表明:最佳酶解条件为pH 5.0、温度45℃、底物浓度12 g/L、酶底比6%、复合酶配比2:1。红外分析表明酶解前后壳聚糖化学结构没有发生改变。 This paper described the enzymatic hydrolysis of chitosan by papain and cellulase. The effects of temperature, pH, substrate concentrations, the ratio of emzyme to substrate and the proportion of compound enzyme on the degradation of chitosan were investigated, and the infrared spectrum was used to analyse the structure of degradation products. The results showed that the optimal pH, temperature, concentration of substrate, the ratio of emzyme to substrate and the proportion of compound enzyme were pH 5.0, 45℃, 12 g/L, 6% and 2:1 respectively. Infrared analysis indicated that the chemical structure of chitosan was not changed after enzymolysis.
