摘要
胆碱是婴幼儿乳粉中必需的营养成分添加剂之一,生产企业对产品的质量控制需要胆碱的检测方法。现有标准——酶比色法,所需的两种酶均需要进口,成本较高,测定要求的实验条件也较高,因此只有个别外资企业与大型乳粉企业使用该方法测定胆碱。本研究中,利用胆碱与雷纳克铵盐形成粉红色的胆碱雷纳克铵盐的原理,用分光光度计测定吸光度进行定量分析,检测样品中的胆碱含量,该方法操作简便、测定重现性好,不需特殊的仪器设备,一般实验室都具备条件,有利于各乳品企业使用。
Choline is one of the essential nutritional additives in milk powder for infant and young children. Production enterprises need to own the choline detection method in order to control product quality. The existing standard is enzymatic colorimetric method, but two kinds of enzymes must be imported, and the cost is high. So only individual foreign enterprises and a few large domestic milk powder enterprises use this method to detect choline. In this study, choline content was measured by a spectrophotometer according to the amount of pink Choline Reinach ammonium salt, which is generated by the reaction of Choline and Reinach ammonium salt. The method is simple and reproducible, and no special equipment and reagents are required. Therefore, it is more conducive to the dairy enterprise.
