摘要 中国人饮茶的历史已有上千年之久,L-茶氨酸(L-Theanine)作为茶叶中特有的游离氨基酸,使人们在饮茶时享受到一种放松、旷怡身心的感觉。此外,茶氨酸还具有抗抑郁、降血压、提高学习能力、抗疲劳、免疫等作用。L-茶氨酸是一种安全、无毒、集多种生理功能于一身的功能因子,且不会产生任何副作用,能在维持和增进国民健康上做出一定的贡献,因此它在国外市场上已深受消费者的欢迎。工业上生产茶氨酸的方法主要有茶愈伤组织培养法、茶叶提取法、化学合成法以及微生物酶法等。关于茶氨酸的功能和合成的报道已屡见不鲜,本文主要介绍了国内外主要生产茶氨酸的厂家和世界茶氨酸工业化生产和应用的发展动向,以及茶氨酸的安全性及其在国内外相关允许添加的法规情况。 Chinese tea has a history of thousands of years. L - theanine, a unique amino acid found in tea plants, makes people feel carefree and happy when they are drinking tea. It also has various favorable physiological and phar- macological functions for human beings, such as anti - depressing, reducing blood pressure, improving learning abili- ty, anti- fatigue effect, immune effect etc. L -theanine, a functional factor without any toxic or side effect, can make contributions to maintaining and improving public health. Therefore, it has been warmly welcomed in foreign markets. Commercially production methods of theanine includes tea callus cultivation, chemical synthesis, extraction from the fresh leaves and enzymatic method. The functions and synthesis of theanine have been reported many tmes. This paper mainly discuss the trends of industrial production and application of L - theanine in the world, and its safety and regulations on the applications.
