武汉郊区寄宿制学校学生膳食状况 被引量:6

Dietary analysis among boarding school students in rural area

摘要 目的了解农村寄宿学校学生膳食情况及学生对膳食的满意度,为提高学生膳食质量提供建议。方法采用分层随机抽样方法,对武汉市3个郊区的7所寄宿制中小学学生160名进行问卷调查。结果农村寄宿制中小学校学生对膳食的满意率为54.12%。小学生平均满意率为79.5%,中学生为25.3%;满意率最高的是在学校"吃饱了"(73.4%),8.5%的学生认为"没有吃饱"。学生对膳食最不满意的是学校饭菜的滋味,满意率为42.6%;其次是膳食营养,满意率为43.6%。在食物结构上,寄宿学生与走读学生在猪肉、禽、蛋类、鱼、豆制品、水果和零食摄入上差异均有统计学意义(P值均<0.01),寄宿学生膳食平衡性好于走读学生。结论寄宿学校膳食基本满足学生吃饱要求,但质量不高,不能适应学生生长发育的需求,需要提高膳食制作的科学性。 Objective To understand the rural boarding schools students" dietary situation, degree of satisfaction and opin- ion, in order to improve the students" dietary quality. Methods By using stratified sampling and random sampling survey method, the students of 7 primary and boarding schools were questionnaired in Wuhan. Results The total satisfaction rate of dietary was 54.12%. The pupils" average satisfaction rate was 79.5%, the middle studentsI was 25.3%. The highest satisfaction rate was 73.4% for " enough food ", only 8.5% of the students reported " not having enough food". The most dissatisfaction rate was 42.6% for the tastes, the second dissatisfaction rate was 43.6% for the dietary nutrition. There were significant difference of dieta- ry structure, such as the intake of meat, poultry, eggs, fishes, bean products, fruits and snacks( P〈0.01 ) between rural boarding students and day students, and the day students had better dietary structure. Conclusion The rural boarding schools provided meals basically meet the quantity requirements, but its quality is not high, which couldn't meet the students' development needs. The rural school refectory must make dietary more scientific.
