酱油中的防腐剂可有效防止其腐败变质,但添加过量会对人体造成潜在危害。为了监控防腐剂滥用,科研人员建立了许多有效的检测方法。文章综述了酱油中添加的防腐剂的检测方法。
The preservatives are effective on preventing soy sauce from deterioration. Abusing it would lead to potential health problems, considering their intake for the human. The researchers establish many effective approaches to detect excessive use of preservatives. This paper will make a review on the detection of preservatives in soy sauce.
