摘要 对金枪鱼骨的营养成分包括基本成分、氨基酸、脂肪酸及矿物元素组成进行测定,结果表明,金枪鱼骨中蛋白质、灰分、脂肪含量分别为57.2%、33.1%、8.0%;其氨基酸含量为26.6%,必需氨基酸占总氨基酸24.89%;鱼骨油中不饱和脂肪酸和饱和脂肪酸分别占39.58%和56.54%,其中DHA和EPA分别为15.89%和1.79%。金枪鱼骨中含17种矿物质元素,Ca和P分别为5.27%和2.89%,另外还含有Na、Mg、Zn和Fe等多种微量元素。由此可见,金枪鱼骨营养丰富,具有很好的开发利用价值。 The nutritional components of the Thunnus albacares bone including its general components,amino acid,fatty acid and mineral elements were determined. As results,the contents of protein,ash and fat in the Thunnus albacares bone were 57.2% ,33.1% and 8.0% respectively. Its amino acid content was 26.6% ,among which the ratio of EAA was 24.89%. The ratio of unsaturated fatty acid and saturated fatty acid in fish bone oil were 39.58% and 56.54% ,and DHA and EPA were 15.89% and 1.79%. There were 17 kinds of mineral elements in the Thunnus albacares bone,the content of Ca and P were 5.27% and 2.89%. Other mineral elements including Na, Mg ,Zn, Fe etc were also determined. Therefore,the Thunnus albacares bone have many nutritional components and it's utilize is valuable.
