摘要
研究了以黑曲霉作为菌种对豆粕进行发酵生产大豆异黄酮苷元的方法,通过单因素试验和正交试验确定了发酵最佳培养基是豆粕质量分数25%,硫酸铵质量分数0.2%,固液比1:4(m:V),乳酸质量分数0.8%。发酵温度40℃,发酵时间18 h。在此条件下,黄豆苷元转化率81.77%,染料木黄酮转化率83.61%。
The experiment designed to study the method of isoflavone preparation by fermentation on soybean meal. According to the solo factor and the orthogonal test, it showed that the optimal substrate was the soybean residue 25%, ammonium sulfate 0.2%, solid-liquid ratio 1 : 4 (m: V) and 0.8% Lactic acid, the optimal fermentation conditions were the total time 18 h and the temperature 40 ℃. The transformation ratio of daidzein was 81.77%, and the transformation ratio of genistein was 83.61% under the conditions.
