摘要 本文采用用固相微萃取(SPME)技术萃取茶叶香气成分,经气相色谱-质谱(GC-MS)分析,对4个典型福建铁观音茶样和1个贵州产铁观音茶样进行了香气成分分析。结果显示,5个铁观音茶样中共检出165种香气化合物,其中1号茶样48种,2号茶样84种,3号茶样80种,4号茶样64种,5号茶样67种。1、2号茶样中以醇类化合物为主,3、4、5号茶样以酯类化合物为主。5个茶样中,检出含量较高的主要有反式橙花叔醇和吲哚。 SPME technology was used to extract aroma components of four typical Tieguanyin samples and one Guizhou Tie Guanyin sample and CC-MS was used to analyze them. The results showed that there are 165 kinds of aroma compounds in all five Tie Guanyin samples, a- mong which the No. 1 samples had 48 kinds, No. 2 samples had 84 kinds, No. 3 samples had 80 kinds, No. 4 samples had 64 kinds and No. 5 samples had 67 kinds. No. 1 and No. 2 samples mainly contained alcohol compounds. No. 3, No. 4 and No. 5 samples mainly contained es-ter compounds. There were high content of trans orange flower tertiary alcohol and indole in all samples.
