不同干燥方法对茶树菇干燥特性的影响 被引量:5

摘要 干制茶树菇是延长茶树菇保质期的有效方法之一。本文采用4种不同干燥方法对茶树菇进行干燥处理,研究茶树菇干燥过程中的干燥曲线、失水曲线、复水比、干制品质的变化和特性。结果表明:对茶树菇4种不同干燥方法干燥效率和失水速率顺序依次为远红外干燥>热风干燥>自然干燥>真空干燥;复水性效果依次为真空干燥(60℃)>远红外干燥(70℃)>热风干燥(60℃)>自然干燥。根据干燥效率、干制品的复水性和品质等综合考虑,茶树菇干燥方法和温度组合首选温度70℃远红外干燥、其次为温度60℃热风干燥方,不宜选择真空干燥和自然干燥。 The dried Agrocybe aegerit was one of the effective ways of extending the shelf life. The drying characteristics of Agrocybe aegerita including drying curves, dehydrating rate curve were studied. Rehydration capability and drying quality of Agrocybe aegerita were analyzed by four different drying technologies. The result showed that the order of drying efficiency and dehydrating rate were that far-infrared drying 〉 hot air drying 〉 natural drying 〉 vacuum drying; the order of rehydrating rate value was that vacuum drying(60 ℃ ) 〉 far-infrared drying (70 ℃ ) 〉 hot air drying(60 ℃ ) 〉 natural drying. According to the drying efficiency, rehydrating rate and the quality of Agrecybe aegerita were comprehensively considered that far-infrared drying at 70 ℃ was the first choice, hot air drying at 60 ℃ was the second choice, and vacuum drying and natural drying was not be selected.
