摘要
利用H2O2对芝麻粗磷脂进行脱色,以芝麻粗磷脂在448 nm波长下的脱色率为评价指标,通过单因素和正交试验得到芝麻粗磷脂脱色的最佳工艺条件为:H2O2体积分数为8%,脱色时间为20 min,脱色温度为40℃.在最佳脱色条件下,芝麻粗磷脂由棕褐色变为浅黄色,脱色率为99.12%.
In this paper, we studied the decolorization process of sesame crude phospholipids by using hydrogen peroxide, and determined the optimum decolorization conditions through single factor and orthogonal experiments by taking the decolorization rate of sesame crude phospholipids at a wavelength of 448 nm as the evaluation index. The results showed that the optimum decolorization conditions were as follows:H202 8%, decolorization 20 minutes, and decolorization temperature 40 ℃. Under optimum conditions, sesame crude phospholipidschanged from brown to pale yellow, and the decolorization ratio was 99.12%.
