摘要 变温压差膨化干燥技术是近年来发展起来的一种新型干燥技术,文章介绍变温压差膨化干燥技术及其制品的特点,并阐述影响果蔬变温膨化的各种因素,如物料特性、预处理、膨化参数等,包括预处理对脱水速率控制的理论探讨,以及果蔬变温压差膨化干燥技术研究目前存在的问题,并展望该技术未来的研究方向及发展趋势。 the explosion puffing drying for fruits and vegetables at vari- able temperature and pressure difference is a new technology developed in recent years. In this paper, characteristics of explosion puffing drying technology at variable temperature and pressure difference and its products were reviewed. And various factors affecting fruit and veg- etable puffing at variable temperature, such as material characteristics, material pretreatment, puffing parameters, and so on, were described. The principle of material pretreatment for controlling dehydration rate and the problems existing in the current research of this technology were also discussed. Finally, the research direction and development trends of this technology were discussed.
