主要综述和总结了单宁酶、多糖水解酶、多酚氧化酶、β-葡萄糖苷酶等多种酶制剂及固定化酶技术在茶饮料中的应用与研究状况,并对其应用前景进行了展望。
The use of several enzymes (tannase, polysaccharide hydrolase, polyphenol oxidase, β-glucosidase, etc.) and the application of immobilized enzyme technology in tea beverages were mainly reviewed and summarized together with the research status concerned, and the prospects discussed.
