摘要
[目的]比较苹果不同部位中5种多酚物质的含量。[方法]利用高效液相色谱法(HPLC),使用C18柱(150 mm×4.6 mm,5μm),测定苹果不同部位中多酚物质的含量。[结果]试验得出,苹果果皮中多酚物质含量芦丁>槲皮素>表儿茶素>儿茶素>根皮苷;果核中多酚物质含量儿茶素>表儿茶素>根皮苷>芦丁;果肉中多酚物质含量表儿茶素>儿茶素>根皮苷>芦丁。[结论]苹果果皮中多酚物质的种类以及含量都高于其他部位,其次是果核,最少的是果肉。研究对于苹果加工中的原料处理及深加工有一定的参考价值。
[Objective] Contents of five kinds of polyphenol in different parts of apple were compared.[Method] Contents of polyphenol in apple were determined by high performance liquid chromatography(HPLC) and a C18 column(150 mm×4.6 mm,5 μm).[Result] The results showed that skin: rutin > quercetin> epicatechin> catechin> ploridzine;corn: catechin > epicatechin > ploridzine > rutin;pulp: epicatechin > catechin> ploridzine > rutin.[Conclusion] The kinds and contents of polyphenol in apple peel are more than that in other parts of apple.The results will be helpful to the treatment of food materials in apple products process and deep process.
