摘要
为研究植物源性肉质调控剂对当年肥羔增质量效果及肉质风味的影响,进行了为期60 d的试验。结果表明,育肥羔羊在添加植物源性肉质调控剂后的日增质量和屠宰率指标,均优于对照;羊肉肉色评分、pH值、肌苷酸、不饱和脂肪酸及亚油酸含量等指标也都显著优于对照。说明植物源性肉质调控剂不仅可以提高当年肥羔日增质量和屠宰率,而且对羊肉品质具有明显的改善作用。
To verify the impact of meat-control agent of plant origin on weight gain and carcass quality of the fattening lamb, 30 crossbred sheep were selected and randomly divided into 3 groups: group A(meat-eontrol agent), group B(TMT) and group C (blank). The results show that Group A are better than the control group on daily weight gain and dressing percentage in the 60 days test. The lamb quality of Group A were also significant better than the control group on color score, pH value, inosinic acid, unsaturated fatty acids and linoleic acid content. These results suggest that meat-control agent of plant origin can significantly improve daily gain, dressing percentage, and the quality of lamb.
