水产品特定腐败菌鉴定方法的研究进展 被引量:10

摘要 微生物活动是引起水产品腐败的主要原因。本文主要针对国内外水产品特定腐败菌(SSO)的研究现状进行综述,总结SSO在预测与延长水产品货架期及水产品安全检测方面的应用价值,分析近年来常规鉴定方法、PCR技术、基因芯片技术、酶联免疫吸附技术(ELISA)、变形凝胶电泳法等水产品SSO鉴定方法的优点和不足,并对SSO的研究前景加以展望。 The spoilage of aquatic products was mainly caused by microbial activity. This paper presented an overview aiming at current study on specific spoilage organism(SSO) of aquatic products both at home and abroad, it summarized the application value of SSO in prediction and prolong the shelf life and safety testing of aquatic products, analyzed and compared the advantages and limitations of identification method of SSO of aquatic products such as conventional identification methods, PCR technology, gene chip technology, enzyme linked immunosorbent assay(ELISA), deformation gel electrophoresis etc, and forcased its research prospect.
