天朝上品柔和酱香酒风格特征成分的分析与研究 被引量:2

摘要 以柔和酱香白酒——天朝上品酒为分析研究样品,采用气相色谱分析香气成分,对29种香气成分进行定量分析。对照大曲酱香型白酒的香气成分进行比较分析,结果表明,柔和型天朝上品酒中的乙酸乙酯含量明显高于传统大曲酱香白酒,丁酸乙酯和己酸乙酯含量明显低于传统大曲酱香白酒,特别是乙缩醛含量明显低于传统大曲酱香白酒。天朝上品酒的品评体现了"绵柔、醇厚、酱香显著、舒适、谐调"柔和酱香的独特风格。 The flavoring compositions of soft Jiang-flavor Tianchaoshangpin Liquor were analzyed by GC, and quantitative analysis of 29 kinds of flavoring compositions were done. Compared with the flavoring compositions of Jiang-flavor Daqu, the content of ethyl acetate in Tianchaoshang- pin Liquor was significantly higher, the content of ethyl butyrate and ethyl caproate was significantly lower, especially the content of acetal was significantly lower. Sensory evaluation of Tianchaoshangpin Liquor proved its special styles of soft, mellow and enjoyable taste and evident Jiang-flavor.
