摘要
L-糖因其具有与D-糖一样的甜味,可被作为甜味剂使用。同时L-糖又与D-糖不同,不能或较少被人体代谢,而这一特点使L-糖可作为特殊人群的甜味剂,如糖尿病人。L-糖的另一个优点是没有人工甜味剂(如糖精等)的后味。L-糖在自然界相对稀缺,特别是L-葡萄糖和L-果糖。研究结合国内外最新报道,介绍L-糖的特性,L-果糖、L-葡萄糖的化学合成方法和酶法合成方法,并介绍了L-糖的应用。
L - sugars are useful as sweetening agents because of D - sugars the sueetness. Unlike D - sugars, L - sugars are not either metabolized by the body or metabolized to a lesser extent than the D - sugars. The features make L - sugars desirable as sweeteners for some special individuals which unable to metabolize common sweetener,e, g. diabetes. Another advantage associated with L - sugars is the absence of an objectionable aftertaste commonly experienced with artificial sweeteners such as saccharin and the cyclamates. However, L - sugars are relative scarcity in nature, particularly L - glucose and L - fructose. In this paper, the struc- ture, properties, synthesis and widespread use of L - sugars combining the international reports and patents were intwduced.
