摘要
研究了 p H值、Zn Cl2 浓度和反应时间对海带护绿效果的影响。结果是 :当 p H=5.0时 ,用 2 0 0 mg/ L的 Zn Cl2 溶液煮沸反应 10 min,海带呈现出的绿色最新鲜 ,在实验范围内护绿效果最好 ,而且腥味也较淡。以完成护绿处理的海带为辅料 。
The effects of pH value, concentration of ZnCl 2 and time of reaction on keeping green in kelp were analysed. Under the conditions of pH=5.0, ZnCl 2 solution of 200 mg/L, boiling for 10min, the kelp presented brightest green so that the effect for keeping green was best under the laboratory conditions, and the smelling was light. Meanwhile, the processing technology of kelp eight treasures gruel was tested.
