摘要
目的了解福州市集中式餐具消毒服务机构的发展改进状况和当前集中餐具消毒存在问题及对策。方法据国家有关卫生规范、卫生标准和检验方法进行监督检查和现场采样送检。结果监督检查福州市42家公共餐具消毒服务单位,2009年现场检查不合格达到18家,合格率仅57.14%。而在2011年现场检查的42家单位中不合格的6家,合格率达到85.74%。从2009年至2011年的检查工作中,餐具消毒情况得到改善。但是各家单位在生产布局、卫生设施、产品质量控制及人员体检方面仍存在一些问题。结论福州市集中式餐具消毒机构更需加强卫生监管工作,规范企业行为;集中消毒餐具合格率较自行消毒的餐饮机构高,因此,在全市范围内推广普及集中式餐具消毒可有效改善餐饮机构餐具的卫生状况,控制食源性疾病的传播途径,保障外出就餐人员饮食安全。
Objective To explore the development and current problems of centralized tableware disinfection serv- ice in Fuzhou and bring some countermeasures. Methods Carry out supervision and take on - site samples for in- spection according to the national hygienic practices, sanitary standards and testing methods of. Results In 2009, 18 out of the 42 centralized tableware disinfection service units inspected in Fuzhou failed to reach the national standards, with a qualified rate of 57.14%. In 2011, only 6 of the 42 units failed to pass the inspection, the quali- fied rate increasing to 85.74%. From 2009 to 2011, the situation of the tableware disinfection has improved. But various problems still exist in the production distribution, sanitation, product quality control and staff health check. Conclusion It's necessary to strengthen supervision on centralized tableware disinfection institutes in Fuzhou, standardize enterprises'behaviors. The qualified rate of centralized disinfection institutes is higher than disinfection -DIY restaurants. Therefore, to promote centralized tableware disinfection institutes within the city is an effective way to improve the health status, control transmission of food origin disease, and protect the food safety.
