不同龄期池蝶蚌的营养评价

Nutrition evaluation of Hyriopsis schlegelii during different ages

采用生化分析方法对不同龄期池蝶蚌常规营养成分、氨基酸组成和含量、以及Zn、Mn、Cu、Fe、Ca、K、Mg、Na等8种矿物元素的含量进行了检测,评判其营养价值。结果表明:不同龄期池蝶蚌粗蛋白质含量为46.35%～59.28%,粗脂肪为3.98%～8.56%,灰分为0.60%～6.78%,水分为76.49%～88.13%。矿物元素种类较多,Cu、Zn、Fe的比值合理。1、2、3龄期池蝶蚌均含有17种氨基酸,氨基酸总量分别是44.80%、44.55%和44.98%,呈味氨基酸分别为18.47%、18.14%和18.49%,蛋氨酸+胱氨酸和苯丙氨酸+酪氨酸为限制性氨基酸。综合评价,池蝶蚌有较高的营养价值和保健功能。

The contents of nutritive compositions such as crude protein,crude fat,ash,amino acid and Zn,Mn,Cu, Ca,K, Mg, Na, Fe of Hyriopsis schlegelii during different ages were measured and its nutritional value was evaluated.The results showed that the contents of crude protein,crude fat,ash and moisture of Hyriopsis schlegelii during different ages were 46.35% -59.28%, 3.98% ~ 8.56%, 0.60% -6.78%, and ？6.49% - 88.]3%, respectively. The trace elements in muscle of Hyriopsis schlegelii were abundant.The ratio of Zn and Cu,Zn and Fe were rational.17 kinds of amino acids of Hyriopsis schlegelii during different ages were identified. In dry sample of 1,2,3 ages Hyriopsis schlegelii,the total content of amino acids were 44.80% ,44.55% and 44.98% ,the content of four delicious amino acids were 18.47%, 18.14% and 18.49%.According to nutrition evaluation, in the amino acids score （AAS） and chemical score （CS）, the limited amino acids were Met ＋ Cys and Phe ＋ Tyr. It indicated that Hyriopsis schlegelii was one of aquatic animal with high nutritive and healthy value.
