摘要
为了优化花生油提取工艺条件,提高产量,以蛋白质的水解度为研究目标,分析了单因素对酶解反应的影响,在此基础上运用正交试验研究酶法提取花生油的优化工艺,从而得出酶法提取花生油的较优工艺:浸提温度60℃,pH9.0,碱性蛋白酶加酶量0.4 mL,底物浓度为20%,蛋白质水解度达0.215;花生乳提油的离心条件3 000 r/min,20 min。
In order to optimize process conditions of peanut oil extraction, degree as the objective, this paper adopted orthogonal experiment to enzymatic extraction of peanut oil. It came to conclusions that hydrogen improving the yield, taking hydrogen analyze optimized conditions of the degree got to 0.215 on conditions of extraction temperature 60 ℃, pH9.0, 0.4mLalkaline protease enzyme , substrate concentration was 20 %, oil extraction rate of up to 65.7 % ; centrifugal conditions of extract oil from peanut milk were 3 000 r/min and 20 min.
