摘要
目的 进一步探讨烹调烟雾对健康的危害 ,并分析职业暴露烹调烟雾对机体免疫功能的影响。方法 分别选择厨师 44例为暴露组 ,管理人员 2 8例为对照组 ,以免疫球蛋白和外周血T淋巴细胞转化率为指标 ,采取多因素分析方法 ,分析职业暴露烹调烟雾对机体免疫功能的影响。结果 暴露组IgG、IgA和T淋巴细胞转化率明显低于对照组 ,而且与暴露年限存在剂量 -效应关系。
Objective To identify the effects of cooking fume on immune function and its hazard to health.Method 44 male cooks and 28 controls were selected.IgG,IgM,IgA in serum and T lymphocytes transformation activity in peripheral blood (PBLT) were used as indicators to represent the immunologic function variation.Results The results of immunological examination of cooks showed that IgG,IgA and PBLT were significantly lower than those in the controls,and the indicators of IgG,IgA and PBLT decreased with exposure years.Conclusion Cooking fume is harmful to immunologic function and humoral immunie function
