摘要
:测定了红桔浮皮枯水果的生理生化指标 ,结果表明 :浮皮果的密度为 6 43.0~ 80 0 .0kg/m3,枯水果的密度低于 6 43.0kg/m3。与正常果比较 ,枯水果的总酸含量、果肉水分含量及出汁率明显下降 ,过氧化氢酶的活性明显减弱 ,而呼吸率和乙醇含量明显升高 ,果胶甲酯酶的活性明显增强。
The physiological biochemical indexes of puffy and granulated tangerine fruit were determined, the results indicated that the density of puffy fruit ranged from 643.0kg/m\+3 to 800.0kg/m\+3 and that of granulated fruit was below 643.0kg/m\+3. In comparison with the normal fruit, the granulated fruit had obviously lower total acid content, moisture content in meat and juice rate and obviously higher respiration rate and ethanol content; in granulated fruit, the activity of catalase abated and that of pectinesterase strengthened markedly. There were significant correlations between some physiological biochemical indexes of puffy and granulated fruit.
