摘要 提出采用预混式燃烧器提高中餐燃气炒菜灶(简称炒菜灶)的热效率。针对炉膛口径为350 mm的炒菜灶,对采用鼓风式、预混式燃烧器炒菜灶的热效率进行试验比较。在满足烹饪的前提下,当锅圈与灶底距离为19 cm时,采用预混式燃烧器的炒菜灶热效率最高(达30.14%),比采用鼓风式燃烧器炒菜灶的最高热效率(对应锅圈与灶底之间距离为24 cm)高6.51%。 The premixed burner is used in order to improve thermal efficiency of Chinese food gas range ( referred to as gas range). For gas range with combustion chamber diameter of 350 ram, the thermal efficiencies of the gas ranges using blast burner and premixed burner are compared experimentally. Under the premise of satisfying the cooking process, the highest thermal efficiency of the gas range using premixed burner is up to 30. 14% when the distance between wok support and gas range bottom is 19 cm which is 6.51% higher than that of the gas range using blower burner when the distance between wok support and gas range bottom is 24 cm.
