Effects of Metal Ions on the Quality of Baiyunbian Raw Liquor

白云边原酒在陶坛贮存过程中,陶坛的金属离子不断溶存到酒中,使酒中金属离子含量丰富。通过对不同陶坛贮存原酒的对比研究,揭示金属离子对原酒的老熟具有一定的相关性。根据不同陶坛贮存原酒的老熟效果差异,可以对陶坛进行合理配置,指导原酒的科学贮存。

During the storage of Baiyunbian raw liquor,the metal ions in the pottery jar dissolved into the liquor continuously,which caused their enrichment in the liquor.The relationship between the metal ions and the maturation of the liquor was discovered by comparison of the raw liquor stored in different pottery jars.According to the different effects of pottery jar storage on raw liquor maturation,the guidance of scientific storage of the raw liquor by proper pottery jaw arrangement was provided.
