摘要
目的分析惠州市生产加工环节食品质量状况,为提出有针对性的卫生监管措施提供依据。方法对惠州市2007-2012年质量计量监督检测所抽检的生产加工食品的检验数据进行分类、对比,分析影响质量的因素。结果 2007-2012年间,抽检生产加工食品21891批次,其中合格18356批次,批次合格率为83.85%;食品标签合格率为95.26%,食品内在质量合格率为88.59%。食品内在质量不合格的原因主要是微生物指标超标,不合格率为6.03%;其次为理化指标,不合格率为5.04%;理化及微生物指标均不合格率为0.34%。食品种类中,豆制品、蔬菜制品和饮料的不合格率较高。结论惠州市生产加工环节食品质量总体良好,但仍应加强微生物指标的监测,并提高食品标签的规范程度。
Objective The aim of this study was to understand food quality in production and processing in Huizhou city and provided information for developing effective supervising regulations. Methods We had sorted and analyzed the surveillance data that were provided by the Supervision Testing Institute of Quality and Metrology of food in production and processing between 2007 and 2012. Results Of 21.891 batches inspected, 18 356(83.85%) were up to standard. Of which qualified sample, the qualified label was 95.26% and the content quality was 88.59%.The major unqualification was due to the above standard of microbial indicators (6.03%) or physical and chemical indicators (5.04%). The unqualified rate of the both two indicators was 0.33%.Of all food products,beans,vegetables and beverages had raltively higher unqualified rates. Conclusion Overall,the food quality in production and processing in Huizhou city was good. However, it still needs to pay more attention to supervise on microbial indicators and the standardization of the food labels.
