Comparing the change in the content of bitter apricot kernel glucoside when the peels of bitter apricot kernel are removed or reserved and we find that there is a litte more bitter apricot kernel glucoside in the products whose peels are removed than in those whose peels are not removed. It shows that it is not necessary to get rid of the peels of bitter apricot kernel in the process of being roasted, baked and simmered.
