摘要
拓展脂肪酶的工业应用;以硅藻土为载体进行猪胰脂酶的吸附固定;结果表明,猪胰脂酶的固定化最佳条件为:pH 6.5,离子强度0.03 mol/L,固定化时间1 h。以固定化猪胰脂酶为催化剂对花生油进行酯交换,得到的改造油的脂肪酸组成和猪油较为接近,软脂酸、硬脂酸含量较猪油有所提高,油酸的含量有所下降。该工艺制备的固定化脂肪酶可用于油脂的改性加工。
Expanding the industrial application of lipase.The porcine pancreas lipase was immobilized on diatomite by absorption.The most favorable condition for immobilization was pH 6.5,ionicintensity 0.03 mol/L,1 h.Transesterification reaction was carried out on peanut oil catalyzed by immobilized porcine pancreas lipase,oil like lard was obtained with increasing content of hexadecylic acid and octadecanoic acid,as well as decreasing of oleic acid.The immobilized lipase obtained in this research could be used in modification of lipid.
