本文介绍了真空油炸技术的技术原理,产品工艺特点,叙述了目前有关真空油炸技术在食品加工中的应用状况,指出了真空油炸技术在应用中存在的问题及其前景发展。
The operating principle and technical traits of vacuum frying process was introduced emphatically.And the application of vacuum frying in the process of food products was sumarized,then the problems and the development prospects of vacuum frying were put forward and discussed.
