摘要
本试验优选了西瓜红色素提取条件,并研究了该色素的抗氧化活性。结果表明,各因素影响红色素提取效果的主次顺序为:提取温度>提取时间>提取的料液比。西瓜红色素提取的最佳条件为:提取温度40℃,提取时间45min,料液比1:3。抗氧化活性研究表明:西瓜红色素具有较强的还原能力;能有效地清除羟自由基;对小鼠肝脏自发性脂质过氧化有较好的抑制作用。
This experiment selected extraction conditions of red pigment in watermelon,and studied the antioxidant activity of pigment.Results show that the successive order of factors are: extraction temperature extraction time liquid-sample ratio.The optimal extraction conditions of extract temperature of 40℃,time 45min,solid-liquid ratio of 1:3.It show that watermelon pigment has the upper reductive ability,can eliminate ·OH and restrain peroxidation of the lipid efficiently by the study of antioxidant activity.
