鳗鱼油微胶囊化工艺条件的研究 被引量:2

Research on Processing Conditions of Eel Oil Micro-encapsulation

摘要 为海洋生物资源中鱼油的提取和充分利用提供参考。采用喷雾干燥法制备鱼油微胶囊,以微胶囊包埋率,产率为产品的评价指标,分别用单因素法和正交法对微胶囊制备过程中的工艺条件进行优化。优化后,最佳工艺条件为,m(明胶):m(阿拉伯胶):m(麦芽糊精)=1:1:3,固形物含量为25%,芯材占壁材含量的30%,喷雾干燥机进风温度200℃,出风温度100℃,均质压力为35 MPa,得到的包埋率和产率分别为93.9%和94.6%。该研究不仅为鱼油的贮存及加工提供了新途径,而且也为鳗鱼内脏的综合利用提供了一种新的方法。 This study aims at providing a reference for the extraction offish oil and full use of marine biological resources. In this study, spray drying was applied in the preparation of eel oil micro-encapsulation, and embedding rate and yield were used as evaluation indexes. Single factor and orthogonal method was used to optimize the process conditions. The result showed that the optimum conditions of fish oil micro-encapsulation were: the ratio of gelatin, gum Arabic and maltodextfin was 1 : 1 : 3, solids content 25%, the ratio of eel oil accounts for wall material 30%, the inlet air temperature of spray dryer 200 ℃, air temperature 100 ℃, the pressure of homogenization 35 MPa, respectively, under which, embedding rate of 93.9%, yield of 94.6% were obtained. This study not only provides an alternative for the storage and processing offish oil, but also provides a new method for the comprehensive utilization of eel viscera.
