摘要
利用预测微生物模型的理念,应用Gompertz模型拟合了不同温度条件下前腿猪肉丝中热杀索丝菌的生长的一级模型,得到了热杀索丝菌在前腿猪肉丝基质上的生长预测模型和相关参数,一级模型拟合的R2都大于0.99。利用平方根模型描述温度与最大比生长速率和延滞期的关系,得到热杀索丝菌的生长预测二级模型,模型可用于预测0℃~20℃范围内热杀索丝菌的变化情况,为经过切分处理的前腿猪肉丝腐败微生物的预测研究提供了基础。
Based on the concept of predictive microbiology models, the growth ofBrochothrix thermosphacta fi'om forelegs pork fitted the Gompertz model under different temperature, and the Brochothrix thermosphacta's growth prediction model and parameters of the model were gotten. The R2 fitting the Gompertz was larger than 0.99. The Belehradek model were used to describe the relationship between the temperature or the maximum specific growth rate and the lag phase, and the secondary model ofBrochothrix thermosphacta was acquired which is a predictive model for the shelf-life of chilled pork stored at a temperature ranging from 0℃-20 ℃ and provides the support for predicting the shelf-life of forelegs strip chilled pork.
