摘要 超微粉碎作为一种物料加工新技术被广泛应用于众多领域。食用及药用动植物原料的活性成分主要存在于细胞内,采用超微粉碎技术可使物料细胞破壁,并极大增加活性成分的渗出、促进人体对其吸收利用和改善物料加工性能。本文主要介绍了超微粉碎的方法以及超微粉体所具有的特点,阐述了该技术在食用和药用农产品加工中的应用和研究情况,并对超微粉碎技术的发展前景做出展望。 As a new materials processing technology, ultra-fine pulverization has been applied widely in many fields. Active compositions of edible and medicinal agricultural products are mainly distributed in the cells. By breaking cell wall, the ultra- fine pulverization technology can greatly increase the dissolution of active ingredients, promote human body absorption and utilization and improve the material processing properties. Mainly introduced the methods of ultra-fine pulverization and the characters of ultra-fine powder, elaborated the applications and researches situation in edible and medicinal agricultural products. Furthermore, a prospect of ultra-fine pulverization technology developing future was given.
