摘要
进入21世纪,除了人们日常生活中的常见食物外,食品的主流又逐渐向功能性食品发展。在众多的功能性食品中,膳食纤维这个新兴的概念逐渐吸引了大众的目光。由于膳食纤维具有维护肠道健康,增强免疫力,降低胆固醇和高血压等生理功能,因此膳食纤维食品也成为了现代营养学的一个热门话题。因此,对于膳食纤维的生理功能研究也随之越来越多,并成为食品研究领域的热点。根据各种研究表明,膳食纤维对于人体的健康有积极的作用。对各类膳食纤维的提取方法进行综述,并概括介绍其发展现状及未来发展趋势。
The functional foods gradually become the main food supplement in the human life since 21'tcentury. In these numerous functional foods, dietary fiber: this new conception attracts people's attention. The dietary fiber food has become a hot topic in modem nutriology because dietary fiber has the physiological functions including maintaining the intestinal health, activating the immunity, decreasing the level of cholesterol, hypertension and so on. Therefore, more and more studies on the physiological function of dietary fiber have been one of the main focuses in the field of the food research. On the basis of the various studies, dietary fiber is beneficial to human health. The dietary fiber extraction methods are summarized, and the devel- opment and trend in the future are concluded.
