摘要
通过离子色谱法对赤霞珠、梅洛和西拉葡萄酒进行9种有机酸含量的测定(分别是乳酸、乙酸、丙烯酸、山梨酸、苯甲酸、苹果酸、酒石酸、富马酸和柠檬酸),共挑选100个来自法国、意大利、澳大利亚、智利和美国的葡萄酒样品进行测定。结果表明,所测定的葡萄酒有机酸含量分别为:乳酸541~3071 mg/L,乙酸25~1822 mg/L,丙烯酸0 mg/L,山梨酸0~241 mg/L,苯甲酸0~39 mg/L,苹果酸148~4890 mg/L,酒石酸137~5032 mg/L,富马酸14~2148 mg/L,柠檬酸4~421 mg/L。以地域、主成分和年份等影响因素分析葡萄酒中各种有机酸含量的差异。
In this study,ion chromatography for simultaneous determination of nine kinds of organic acids and four kinds of negative irons in Cabernet sauvignon,Merlot and Shiraz was carried out.The organic acids included lactic acid,acetic acid,acrylic acid,pentadiene carboxylic acid,benzoic acid,malic acid,tartaric acid,fumaric acid and citric acid.100 wine samples from France,Italy,Australia,Chili and America were selected for the test,their organic acids content were as follow:lactic acid content was 541~3071 mg/L,acetic acid content 25~1822 mg/L,acrylic acid content 0 mg/L,pentadiene carboxylic acid content 0~241 mg/L,benzoic acid content 0~39 mg/L,malic acid content 148~4890 mg/L,tartaric acid content 137~5032 mg/L,fumaric acid content 14~2148 mg/L,and citric acid content 4~421 mg/L.The factors influencing the content of organic acids in red grape wine such as growing regions,major components and vintage year etc.were analyzed.
