米缟螟-白茶虫茶的营养成分分析与评价 被引量:10

摘要 首次对贵州主要虫茶品种米缟螟-白茶虫茶的营养价值进行综合评价,对其营养成分进行了分析测定。利用白茶饲喂米缟螟幼虫获得米缟螟-白茶虫茶,分析其一般营养成分、茶特征物质、氨基酸、脂肪酸、矿物质和重金属组成,并以三叶虫茶和常规茶为参照,对米缟螟-白茶虫茶的营养价值进行评价。结果表明,米缟螟-白茶虫茶的氨基酸总量较高,其8种必需氨基酸约占氨基酸总量的39.56%,必需氨基酸与非必需氨基酸的比值为75.46%,4种呈味氨基酸占氨基酸总量的36.39%,必需氨基酸评价显示米缟螟-白茶虫茶的氨基酸模式接近大豆且远优于常规茶,其Mg、Ca、Fe含量,重金属含量无超标。由此可见,米缟螟-白茶虫茶氨基酸和矿物质含量丰富、种类齐全,氨基酸模式较合理,是优质蛋白和安全的氨基酸补给佳品,具较高营养价值。 In order to make first comprehensive estimation for the nutritional value of Aglossa dimidiata-Litsea coreana insect tea (ALIT for short), which was a major kind of insect teas in Guizhou province, its nutritional components were analysed. By feeding on Litsea coreana only, the faeces of Aglossa dimidiata was ALIT. Then the nutrient components, tea characteristic materials, amino acids composition, fatty acids composition, mineral elements and heavy metal elements of ALIT were analysed, the nutritional value of ALIT was evaluated by comparing with Sanye insect tea and the common tea. Results showed that the total content of amino acids in ALIT was high, 8 essential amino acids were 39.56% of the total amino acids, the percentage of essential amino acids content to the nonessential amino acids was 75.46%, 4 delicious amino acids were 36.39% of the total amino acids, the essential amino acids pattern of ALIT was close to Soybean but much better than common tea. The contents of Mg, Ca and Fe in ALIT were high, the contents of heavy metals in ALIT were not over standard. Thus it can be seen that the amino acids and mineral elements in ALIT are abundant and have a complete variety, the amino acids pattern of ALIT is rather reasonable. The ALIT, which has good nutritional value, is a kind of quality protein and safe amino acids-supplementary.
