摘要
目的了解汝阳县餐饮业从业人员食品卫生知识和卫生行为掌握现况,为进一步开展卫生知识培训提供科学依据。方法采用城区普查与农村整群抽样相结合的方式,对650名汝阳县餐饮业从业人员进行问卷调查。包括一般情况、食品卫生知识和卫生行为三个维度。应用Epidata3.1录入数据、SPSS12.0统计分析。结果汝阳县餐饮业从业人员食品卫生知识的平均得分为(13.42±5.42)分(满分38分),合格率9.91%;卫生行为的平均得分为(10.09±2.30)分(满分12分),合格率80.03%。不同特征人群(年龄、文化程度、工作年限、收入水平、培训次数)卫生知识得分差异具有统计学意义(P<0.05)。Logistic回归分析显示食品卫生知识知晓率的主要影响因素是:文化程度(OR=2.002.P<0.001)、从业年限(OR=1.512,P=0.024)和年龄(OR=1.324,P=0.041)。食品卫生知识知晓与卫生行为之间存在关联(r=0.139,x2=12.341,P<0.05)。结论汝阳县餐饮业从业人员食品卫生知识知晓率偏低。年龄较小、文化程度较低、从业年限较短的从业人员应作为今后食品卫生知识培训的重点。重视岗前食品卫生知识培训对提高卫生行为具有积极意义。
Objective To investigate the mastery of hygienic knowledge and conducts of its related behaviors of catering practitioners in Ruyang County in order to provide scientific accordance for the further corresponding training. Methods With the combination of census and cluster random sampling, we sampled 650 catering practitioners in our survey, which includes three dimensions: general conditions, hygienic knowledge and its related behaviors. Data were analyzed with Epidata3.1 and SPSS12.0 software statistically. Results The average score of hygienic knowledge of catering practitioners in Ruyang County is 13.42 ± 5.42 out of 38, and the average score of conducts of hygiene related behaviors in the group is 10.09 ± 2.30 out of 12. The qualified rate of hygienic knowledge and its related behaviors was 9.91% and 80.03 % respectively. There is statistical significance of the differences in scores of the hygienic knowledge engendered by in diversities of the ages, educational level, working life, income level and training times. Logistic stepwise regression analysis shows that the main influencing factors of hygienic knowledge awareness rate are ages, educational level and working life. Hygienic knowledge level is positively correlated with its related behaviors. Conclusion In general, the hygienic knowledge awareness rate of catering practitioners is relative low in Ruyang County. Paying more attention to the pre-service hygienic knowledge training is necessary.
