2011年滨州市水产品中甲醛含量状况调查 被引量:2

摘要 [目的]了解滨州市水产品中甲醛含量状况。[方法]2011年8~9月,对滨州市超市、农贸市场的水产品进行甲醛含量调查。[结果]水产干品及加工品中大部分样品的甲醛含量合格(在10mg/kg以下),合格率为78.95%,甲醛含量最高的样品为鱿鱼丝80.6mg/kg,超标8倍;鲜冻类产品中甲醛含量合格率为55.71%,部分样品中甲醛含量超标严重,如银鱼中甲醛含量最高为1 023.8mg/kg,超标100多倍,水产干品及加工品鲜冻类产品合格率差异有统计学意义(P<0.05)。农贸市场的水产品合格率为57.85%,大型超市的为80.95%(P<0.05);散装水产品的为60.91%,预包装产品的为88.89%(P<0.05)。[结论]滨州市水产类产品中甲醛含量状况令人担忧,需要进一步加强监测、监督。 [Objective]To understand the concentration of Formaldehyde in aquatic products, Binzhou city. [Methods] During August - September,2011 ,a survey was made on formaldehyde in aquatic products of supermarkets,farm markets and restaurants in Binzhou city. rResults3The concentrations of formaldehyde in most of dried or processed aquatic prod- ucts were qualified (under 10 mg/kg), the qualified rate was 78.95 %, formaldehyde content was highest in the sample for squid silk 80.6 mg/kg, exceeding the standard 8 times. The qualified rate of frozen fresh aquatic products was only 55.71%,in some samples formaldehyde exceeded the standard seriously, such as whitebait formaldehyde content was highest for 1 023.8 mg/kg,exceeding the standard 100 times. Two types of product qualified rate statistical significance of the differences( P 〈0.05). At the same time on the analysis and comparison of different sampling sites and different forms of packaging samples found in, qualified rate difference also had statistical significance:the farmers market, the qual- ified rate was 57.85 %,the large supermarket qualified rate 80.95 %, two types of sampling site sample passing rate had a significant difference ( P %0.05) ;aquatic products in bulk the qualified rate was 60.91%, pre-packaged products pass rate of 88.89% ,two kinds of packaging form sample passing rate had a significant difference ( P 〈0.05). [Conclusion]The status of concentration of formaldehyde in aquatic products is worried in Binzhou city,administrative supervision must be strengthened.
