十字花科蔬菜中萝卜硫素含量的影响因素 被引量:4

摘要 流行病学研究发现,提高十字花科蔬菜的摄入量能够显著降低癌症发病率,其中萝卜硫素发挥了重要作用。文中对影响十字花科蔬菜中萝卜硫素含量变化的生长、加工以及贮藏等条件进行了综述,以期为十字花科蔬菜中萝卜硫素含量的调控提供参考。 Epidemiological studies have shown that an increase consumption of brassicaceous vegetables could decrease the risk of cancer,in which sulforaphane plays a very important role. In this paper,it was reviewed the recent research progress in growth,processing and storage conditions that influence the sulforaphane content of brassicaceous vegetables,to provide the basis for promoting the sulforaphane content during theoretical researches and manufacturing practices.
