超快速色谱和高分辨质谱联用直接分析红酒

摘要 概述 红酒是一种非常复杂的混合物,富含有益的抗氧化成分。这些天然产物的鉴定和定量具有很大的挑战性。超高压液相色谱(U-HPLC)与Thermo Scientic LTQ Orbitrap XL质谱联用被用于法国红酒的分析,能同时检测和相对定量红酒样品中的抗氧化剂成分。饮用红酒带来的大多数健康功效与多酚类化合物(如槲皮素)有关,本文鉴定了这些成分,并比较了两个不同年份的红酒中化合物含量的区别。
