摘要
选用油莎豆粕为原料,采用碱溶酸沉法制备油莎豆粕蛋白,在测定等电点基础上,选用pH、料液比、浸提时间、浸提温度为考察对象,以蛋白提取率为评价指标,通过单因素试验和Box-Benhnken中心组合设计原理及响应面分析法,确定提取油莎豆粕蛋白的较佳工艺pH8.85、料液比1:21g/mL、浸提时间58min、浸提温度50℃,油莎豆粕蛋白提取率达64.03%。
Cyperus esculentus meal as raw material, a method prepared by alkaline extraction followed acid precipitation was proposed for extraction protein from Cyperus esculentus meals, On the basis of isoelectric points of Cyperus esculentus meals protein were determined. Selection of pH, material/ liquid ratio, extraction time and extraction temperature as the research object, protein extraction rate as evaluation index, through sing-factor and Box-Benhnken design and response surface methodology, the optimum extraction conditions were determined as pH8.85, material/liquid ratio 1:21 g/mL, extraction time 58 min, extraction temperature 50 %. The extraction rat for these optimum condition was 64.03%.
